Jerry Lau reached up and grabbed an apple, small, the size of his palm, bright red.
"These ones add a tart bite," Lau said.
Lau and his brother Jack are the co-owners of Double Shovel Cider Company along with Galen Jones. This week Double Shovel is pressing apples and creating cider to be sold in the late fall.
The cider here is "dry" not sweet. In particular the apples that come from Alaska are smaller, tart, some are a brilliant color red while others are a pale green. The company offers a traditional cider as well as other unique ideas like pineapple and blueberry.
We were with Jerry as he picked apples earlier in the week and then met up with him again on Thursday to see the process of making cider.
